Carpet underlay

Whilst most of my carpets will go back into my GT after a good clean, I do want to replace the rather tatty underlay with something new and ideally better performing.
What is the received wisdom here; just buy the ready cut felt sections that are available, buy a sheet of domestic underfelt and cut the sections out by hand using the carpets as pattern ? Also Ive noticed there is no bituminous type sound deadening material in mine, Im presumably this went went the previous owner had the car comprehensively rebuilt with new panels and sills etc (but later ran out of funds so sadly skimped on the paint and the interior.)
Should i be looking at sheets of thick self adhesive sound deadenning that could away with the need for underfelt ?
